This Festive Drink – The Method

WHere is a simplified version of a drink found on a new cocktail list. Designed as a large-volume premix that is packed with flavours of a Christmas time, rendering it perfect for a holiday party. Reserve the remaining syrup to use in morning drinks, desserts, or to mix more rounds of bikinis.

Yields 10 guests

Ingredients for the Clementine Syrup (makes 750ml)

300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g fine sugar

To make the Cocktail (produces 850ml, enough for 10)

400ml good quality vodka
100ml classic gin
150ml peach liqueur
200ml clementine syrup (from the recipe above)
Whole cranberries, for garnish
Mandarin essential oil, to finish

Directions

To prepare the Cordial: Put every items into a saucepan, bring to a light boil, mixing so the sugar melts. Then, remove from the burner and let it to reach room temperature fully. Decant into a sterilised bottle, seal and store chilled, it can be stored for about one month.

For the Premix: Pour all the liquids in a large bottle, let it rest for 60 minutes, then pass it through , ideally through muslin, making it fully clarified.

To serve: Pour 85ml from the batch mix into a mixing glass filled with ice, and stir lightly for one minute to chill. Filter into a frosted cocktail glass or equivalent, top with a few cranberries adding the final touch by giving it a light spray with the mandarin essence above the glass.
